Here’s a classic recipe for London Broil which begins with wine and vinegar that breaks down the muscle tissue and makes it very tender. If you want to make this recipe perfectly authentic then choose a flank steak to make your London Broil. A flank steak is part of the under side of the cow and is very flavorful, but contains very little fat and can become tough very quickly. To make a flank steak tender it needs to be cooked in liquid grilled hot and fast.
This is an old English-style London Broil recipe that has lots of flavor and will give you a tender cut of steak.

Ingredients:
* 1 1/2 to 2 pounds flank steak
* 1/2 cup butter
* 1/4 cup beef broth
* 1/4 cup dry red wine
* 2 tablespoons oil
* 2 tablespoons minced fresh parsley
* 2 cloves garlic, minced
* 1 tablespoon red wine vinegar
* 1 tablespoons minced scallion tops
* 1 teaspoon Worcestershire sauce
* Salt and pepper to taste
Preparation:
Cut 1 inch diamonds about 1/8 inch deep into both sides of the flank steak. Rub with minced garlic and place in shallow baking dish. Lightly coat with oil, vinegar and salt and pepper. Let sit at room temperature for about 30 minutes. While that’s sitting, melt butter and mix together with beef broth, wine, Worcestershire sauce, parsley and scallions. Keep warm until ready to serve. Grill steak about 4 to 5 minutes on each side. Don’t over cook or it will get tough. Remove from grill and cut into thin strips. Serve with sauce.
One of the most delicious and savored steak dishes is filet mignon. This cut of beef will cook up juicy and tender. You can use either fresh or dried herbs for this recipe. However, if you use dried herbs double the called for amount to get the most flavor for the crust.

Ingredients:
* 4 filet mignon, about 1 1/2 inches thick
* 4 tablespoons olive oil
* 2 cloves garlic, minced
* 1 teaspoon rosemary
* 1 teaspoon thyme
* 1 teaspoon marjoram
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
Preparation:
Heat olive oil and garlic in a covered microwave safe bowl for 50-60 seconds, remove and allow it to cool. Add herbs and stir. Place filet mignon into a shallow glass dish. Pour herb mixture over and turn steaks to coat. Cover and let marinate for 1-4 hours in refrigerator. Preheat grill for high heat. Remove steaks, remove excess oil, and season with salt and pepper. Place on grill and cook for 5-6 minutes per side. Remove from heat and serve.
